Quick and Easy Okra!

     Yes! I have a new love... called, roasted okra. I struggle with frying it, although I absolutely love fried okra.  The trouble is, I can never fry it slow enough so that it doesn't smoke up my kitchen. And I almost always scorch a batch. I get so mad, it makes my poor husband crazy. What a shame to allow cooking hiccups to turn into such a fiasco!  SO... I read that you can trim the caps and split the ends of okra and simply brush them with olive oil and put them on the grill (use a grilling pan for veggies of course) and grill for a short period just enough to char them. Well you know I have to put a twist on it. I figured the oven would do the job... and it works! At least I love it. I washed the pods, left them whole, sprinkled them with olive oil, sea salt, black pepper, and a little cumin which gave a nice flavor.  Cooked on broil (around 475 degrees) uncovered, until they felt a little soft to the fork but still firm; I didn't want them to be slimy.  They actually turned out very yummy.  
     There are many blogs and websites out there to help all of us (some struggling) cooks out there.  Try Joy Bauer's blog.  She posts very easy recipes that are beyond easy, and she provides the nutritional value for each recipe too.  She has some great tips for healthy foods that are good for your skin, such as sweet potatoes, carrots, spinach, and pecans.
